I seasoned this winter pasta recipe with the herbs mixture described in the post Mediterranean Aromatic Mixture: red chili, rosemary, sage, oregano, marjoram. I will prepare this mixture again this summer.
Cauliflower pasta with aromatic herbs
Ingredients
700g cauliflower
160g sedani rigati or other short pasta
6 anchovy fillets
3 tbsp grated Parmesan cheese
125g mozzarella
30g cream cheese
1 tbsp mixed aromatic herbs
3 tbsp olive oil
Directions
Cut the cauliflower into pieces and cook in salted boiling water until it is very tender. Drain and keep aside.
Heat olive oil in a large skillet, melt the anchovy fillets and add the cauliflower. Cook for a couple of minutes, stirring frequently.
Meanwhile cook the pasta normally in boiling salted water.
Add the Parmesan and mozzarella cut into pieces in the skillet and stir until the sauce becomes creamy. Add cream cheese and remove from heat.
Drain well the pasta and season with the cauliflower sauce. Sprinkle with aromatic herbs and serve immediately.
