Recipe: Aromatic spring risotto

Rice recipes with aromatic herbs

I harvested some fresh herbs in my garden today, and cooked this spring risotto.

Aromatic spring risotto

Serves four:
400g arborio rice
2 red onions
4 sprigs of parsley
10 sage leaves
1 sprig of rosemary
4 sprigs of coriander
4 sprigs of dill
10 fresh leaves of garlic
200g ricotta cheese
50g grated parmesan
50g cheddar

Fry sliced onions in butter in a large pan until transparent.
Meanwhile wash and mince the aromatic herbs.
Put the rice in the pan, stir 1 minute and cover with boiling salted water. Carry on adding water if needed, until the rice is soft but with a slight bite.
Add the ricotta, parmesan and cheddar cut into cubes. Remove from heat, add the aromatic herbs and serve hot.
