Recipe: Middle Eastern aromatic mixture

Last year I prepared two aromatic mixtures, the Mediterranean Aromatic Mixture and the Asian Aromatic Mixture. This summer I planned to prepare also a third one, with a middle eastern touch.

HerbsI harvested and dried all aromatic herbs throughout the summer, and when I finally prepared the mixture the smell of toasted sesame and mint was amazing.

I didn't use any chili because my three years old son doesn't like hot recipes, but one or two Cayenne chilies should be added in a grown up version of this mixture.

Middle Eastern Aromatic Mixture

Middle Eastern Aromatic Mixture

The doses refer to dried ingredients.
2 tbsp horsemint
1 tbsp white mint
1 tsp pennyroyal
1 tbsp cinnamon basil
1 tbsp basil
2 tbsp spice basil
1 tbsp balm
1 tbsp sage
1 tsp marjoram
1 tbsp sesame seeds
1 tsp nigella seeds
1/2 tsp dried garlic

Roast in a pan sesame and nigella seeds for a couple of minutes.
Add the remaining ingredients and roast for few seconds.

Herb mixtureMince finely with a blender and store in a jar for up to six months.
