Recipe: Avocado nachos dip with coriander

Sometimes it seems that I can't have enough fresh coriander. I sow it three times:
- in September to harvest the leaves during winter
- in January to harvest the leaves in spring
- in March to harvest the leaves during summer and the seeds in autumn
So now I'm harvesting fresh leaves from the autumn plants, and these in the picture are the newborn January plants.
With this trick I prepare fresh dishes like this during winter.
Avocado nachos dip with coriander
Ingredients
1 avocado
2 coriander sprigs
150ml white yogurt
1/2 tsp of taco seasoning mix
nachos
Directions
Peel and deseed the avocado, then smash it into a puree. Add the minced coriander, the yogurt and the taco seasoning mix.
Serve as a nachos dip.
