I am growing tomatoes cherry black: they're similar to cherry tomato in size, shape and taste, but become dark red when ripe.
Couscous salad with cherry tomatoes and aromatic herbs
Ingredients
150g couscous
150ml vegetable stock
2 tomatoes, medium size
1 teaspoon italian seasoning or another aromatic herbs mixture (oregano, marjoram, rosemary, sage, thyme, garlic...)
olive oil
cherry tomatoes, cucumber, fresh vegetables of your choice
Directions
Cook the couscous with the vegetable stock and two tablespoons of olive oil.
Peel the tomatoes and grind into a puree. Season the couscous with this tomato cream, aromatic herbs and olive oil.
Add cherry tomatoes, cucumbers and other fresh vegetables cut into chunks.
Let rest and serve at room temperature.
