Recipe: Mandioc bread with Jalapeno
Bread with chili
December 20, 2010
I used mandioc flour (aka yucca flour) and some Jalapenos to create a south american style bread, to serve with some chili.
Mandioc bread with Jalapeno
Ingredients
50g mandioc flour
125g durum flour
125g all-purpose flour
1 tsp salt
60ml oil
1 egg
100ml milk
100ml lukewarm water
7g dry yeast
2 green jalapenos
Directions
Mix the three flours and the salt, then add in order: the oil, the beaten egg and then the milk.
Dissolve yeast in lukewarm water and add to the mixture. Mix well.
Cut in half the jalapenos, remove stem and seeds and slice them, then add to the mixture.
Let rise for one hour.
Place in a greased square pan 25cm wide and bake in preheated 180° C (356 F) oven 30 minutes.
