I never get tired of preparing new muffins : in less than an hour you bake sweet or savory tidbits, loved by children.
As I told in the post Vegan burger with aromatic herbs, my son is a picky eater, but he became a muffin fan, he loves to prepare the dough with me, watch them in the oven and taste them immediately while still hot.
This is our last recipe: muffins with the classic pairing of chocolate and mint, with a rustic texture given by the whole wheat flour and ground hazelnuts.
Chocolate and mint muffins
Ingredients
Makes 12 muffins:
150g all-purpose flour
50g wholemeal flour
150g sugar
2 teaspoons baking powder
40g chopped hazelnuts
2 eggs
50g butter
100g milk chocolate
50ml milk
10 leaves of white mint
Directions
Mix flour, sugar, chopped hazelnuts, chopped mint and baking powder. Add the beaten eggs.
Melt the chocolate with the butter over very low heat and add to the mixture. Add the milk.
Grease a muffin pan and bake in preheated 180° C (356 F) oven 15-20 minutes.
