Recipe: Manakish Zaatar (Arab pizza)

ZaatarZaatar is an arabic word that means marjoram, but also indicates an herb mixture with marjoram, thyme, oreganon and sesame seeds. Sometimes it also includes sumac, winter savory, cumin and fennel seeds.


This mixture may be used as a dip for pita bread like the Dukkah, or on the Manakish Zaatar, tasty small pizza of arabic style.

Manakish Zaatar (Arab pizza)


Ingredients
For the dough:
250g durum wheat flour
1 tsp. salt
1 tbsp. olive oil
15g brewer's yeast
100ml water
For the zaatar:
3 tsp. marjoram
1 tsp. thyme
1 tsp. oreganon
1 tsp. sesame seeds
2 tbsp. olive oil

Directions
Stir together the flour, salt and olive oil.
Dissolve the yeast in some warm water, add to the flour and knead it well.
Gradually add the remaining water to the flour, and work the mixture into a dough.
Knead vigorously for about 15 minutes, until the dough is no longer sticky.
Cover and allow to rise for 1 hour in a warm place.

Meanwhile prepare the Zaatar: toast the sesame seeds in a pan for a couple of minutes, then remove from heat.
Add marjoram, thyme and oreganon.
Pour in the olive oil and set aside.


ManakishRoll the dough out 1 cm thin, and cut into squadres.
Brush with the zaatar and put on a oiled baking pan or on a baking sheet. Bake in preheated 180° C (356 F) oven 15-20 minutes.

Serve with cream cheese, greek yogurth or labneh.

I love zaatar, though I ve only ever seen it made with sumac. I didn t know marjoram was the essential ingredient. Delicious!

Yes sumac is another tipical ingredient of manakish zaatar.
