Recipe: Herbed grilled salmon
Fish with aromatic herbs

This is a variation of the traditional salmoriglio (an oil, lemon and parsley seasoning for grilled fish). I used more delicate herbs (rocket, chervil, thai basil), to cover completely the salmon steaks.
Herbed grilled salmon
Ingredients
2 salmon steaks
juice from 1 lemon
4 tbsp olive oil
10 thai basil leaves
5 rocket leaves
1 bunch of chervil
Directions
Mix the olive oil with lemon juice. Using a rocket leaf, brush often the salmon with this seasoning while you cook it.
Mince together thai basil, rocket and chervil and add to the remaining seasoning. Pour over the salmon steaks and serve immediately.
