Recipe: White bean soup with thyme

I used some fresh wild thyme for this warm soup.
White bean soup with thyme
Ingredients
250g tinned Cannellini beans
1 bay leaf
1 onion
1 carrot
1 celery stalk
1 tomato
1 clove garlic
1 tsp. thyme
salt and black pepper
Directions
Mince the onion, carrot and celery and fry in a pot with oil. Add the bay leaf and cook until the vegetables are tender.
Add the peeled and diced tomato, minced garlic and thyme and cook five minutes.
Meanwhile blend one third of the cannellini beans into a puree.
Add the whole beans and the beans puree to the pot. Pour in some water and cook ten minutes. Remove the bay leaf.
Garnish with fresh thyme leaves and serve hot with bread slices.
