Recipe: Potato casserole with parsley

Parsley is a famous aromatic herb... that's the reason why I don't talk about it often. It's great with fish or mushrooms, but maybe you don't know that it's perfect on potatoes too.
Potato casserole with parsley
Ingredients
Serves four:
700g potatoes
100g smoked scamorza cheese
50g grated parmesan
200g ricotta cheese
half onion
2 eggs
minced parsley
Directions
Peel the potatoes and cut them into 1cm slices.
Brush a small baking pan with melted butter. Layer from the bottom: half of the potato slices, sliced scamorza, grated parmesan, minced onion, remaining potato slices.
Beat the eggs with ricotta cheese and parsley. Pour on the potatoes and bake in preheated 200° C (392 F) oven 30 minutes.
