Recipe: Herbed millet bread
Bread with aromatic herbs

Millet flour has a strong peculiar aroma, and adding some herbs to this dough I baked a incredibly flavorful dark bread.
It's perfect with the Chili Jam, and with creamy cheese.
Herbed millet bread
Ingredients
200g millet flour
200g rice flour
75g whole oatmeal flakes
50g cornstarch
2 tsp. salt
7g dry yeast
1 tbsp. sugar-cane
2 eggs
3 tbsp. single cream (or sour cream)
1 clove garlic
30g fresh basil leaves
250ml warm water
Directions
Mix the dry yeast with the sugar, then add some spoonful of warm water and wait until it becomes foamy.
Beat the eggs with the single cream, add the minced garlic and basil leaves.
Mix together the millet flour, rice flour, whole oatmeal flakes, cornstarch and salt, then add the eggs mixture.
Add the yeast and gradually the remaining warm water, kneading until the dough is smooth.
Put in a oiled baking pan, and let it rise 1 and 1/2 hour.
Bake in preheated 180° C (356 F) oven 35 minutes.
