Recipe: Chili pie with herbs and spices
Savory pies and pizza with herbs

A savory pie inspired by the Mexican chili, in ingredients and spices: coriander, cumin, and red chili, with the addition of fresh leaves of welsh onion (or scallion) for a touch of green. It's perfect for a brunch or picnic.

Chili pie with herbs and spices
Ingredients
1 bell pepper
150g diced bacon
250g cooked beans
1/2 tsp coriander
1/2 tsp cumin
1 red chili
125g mozzarella
4 slices sandwich bread
2 eggs
100ml milk
5 tbsp flour
1/2 tsp baking powder
fresh scallion
Directions
Fry the bacon in a large pan for a few minutes, then set aside
Cut the pepper into strips and cook for 15 minutes in the bacon sauce.
Add beans and minced spices, and cook for a few minutes. Remove from heat.
Roll the sliced bread with rolling pin, then place in a greased baking sheet (or use parchment paper).
Spread the mixture of peppers and beans, then top with bacon and diced mozzarella.
Beat eggs, milk, flour, baking powder and chopped scallion, then pour over the pie.
Bake in preheated 180° C (356 F) oven 25 minutes.
