Recipe: Pasta Checca sul Rogo

Pasta with aromatic herbs

Checca sul rogo is a traditional italian pasta dish, with aromatic herbs and chili.

Aromatic HerbsUse your own fresh herbs combination, but should not miss basil, sage, rosemary, garlic and/or chives and chilli. You can also add parsley, a few leaves of celery and a pinch of dried oregano.

Ingredients
Serves two:
180g spaghetti
1 fresh rosemary sprig
4 sage leaves
4 basil tops
4 chives leaves
1 clove garlic
1 chili pepper
2 ripe tomatoes
5-6 tbsp olive oil

Directions
Mince finely the herbs and hot pepper with the mezzaluna. Peel the tomatoes and cut into small cubes.
Boil salted water. Add the spaghetti and cook until al dente.
Meanwhite heat the olive oil in a pan with the clove garlic. After a couple of minutes discard the garlic and put the diced tomatoes in the pan.

HerbsPut the drained spaghetti in a serving plate, add the tomatoes and herbs.
Cover and serve immediately.

Thanks so much for sharing with Presto Pasta Nights. This one looks particularly delicious. And since we re having frost warning and my daughter has just harvested the last of her herb garden to save them.... this is the perfect dish!
