Aromatic herbs in March

Growing aromatic herbs
March 21, 2011

A walk among the aromatic herbs and herbal teas at the beginning of spring: harvests, small tasks, and future promises.

Horse mintHorse mint has been productive throughout the winter and now it has new green leaves, to use raw.

Some ideas: mint recipes

Pennyroyalpennyroyal sowed in October is more abundant than ever: it's more delicate than mint, with smaller and tender leaves.

White MintWhite mint is emerging from winter dormancy: I just removed all old stems and some weeds.

Apple MintApple mint is developing new shoots too.

BuckIt looks like grass, but it's buck's-horn plantain: an aromatic herb that I added to many winter dishes.

Wild ThymeWild thyme is more resistant than regular thyme, but less aromatic. I like to use its tiny leaves fresh instead of drying it.

Curly Leaf ParsleyCurly leaf parsley is decorative but it also has a good parsley flavour.

ChamomileThis chamomile plant surprised me borning in an empty pot: it started to bolt and I will begin to harvest it soon.

MirtleThe mirtle sowed last year is growing slowly. I never growed this plant before, but I guess it's too soon to think about the harvest.
