This couscous recipe mix the summer flavour of fresh mint with autumn fruits like pomegranate and pistachios: it's the perfect dish for winter solstice, to eat remembering the past seasons.

Couscous salad with pomegranate and pistachio
Ingredients
Serves four:
150g couscous
half pomegranate
3 tbsp pistachios, toasted
juice from half lemon
30ml olive oil
1 tbsp Dijon mustard
1 tbsp mint leaves
1 tbsp parsley leaves
1 clove garlic
salt and black pepper
Directions
Prepare the vinaigrette with olive oil, lemon juice, minced garlic, mint and parsley, mustard, salt and black pepper.
Cook the couscous normally, season with the vinaigrette, then add pomegranate seeds and chopped pistachios.
