The clary sage is a variety of sage with large, thick leaves. I used it for a vegetarian burger recipe.
I also added some onion shoots, more digestible and delicate than onion.
To create a quick snack, I prepared a yogurt sauce with basil and chives garlic...
...and harvested some tomatoes from my rooftop.
We really enjoyed this vegetarian burgers, fresh and tasty, and also my fussy three years old child approved it.
Vegetarian burgers with clary sage
Ingredients
Makes four large vegetarian burgers:
250g beans
3-4 clary sage leaves
100g ricotta cheese
50-60g breadcrumbs
shoots of an onion (or 2 spring onions)
Basil sauce:
125g white yogurt
1 bunch of basil
10 chives garlic leaves (or chives)
soft rolls
Dijon mustard
tomatoes
Directions
Mince together the ingredients for the burgers, then shape into four burgers.
Fry over medium-high heat with a little olive oil on both sides, until well browned.
Chop the basil and chives garlic and add them to yogurt.
Cut sandwiches in half, spread half with Dijon mustard and half with the yogurt sauce, then stuff with burgers and tomato slices.
