Recipe: Broken pizza with arugula and basil
Savory pies and pizza with herbs
June 23, 2008
I love pizza. This unusual idea can be served as a salad, as a single course, or even as an appetizer for a pizza-dinner with friends... while you're waiting for the pizza to be ready.

Broken pizza with arugula and basil
Ingredients
Serves two:
300g pizza dough
2 ripe tomatoes
1 bunch of rocket
20-30 basil leaves
10 black olives
olive oil
1 clove garlic
Directions
Using a heavy rolling pin (or dough sheeter), roll the dough out very thin. Cut into diamonds and put in a greased baking pan. Bake in preheated 220° C (428 F) oven 20-25 minutes.
In a salad bowl, season the broken pizza with diced tomates, sliced olives, rocket, basil, minced garlic, salt and olive oil.
Serve hot or at room temperature.
