Peas Soup with GingerAdd a piece of ginger to winter soups, and its slightly pungent aroma will make you feel warm and happy.

Peas soup with ginger

Serves two:
300g peas (fresh or frozen)
1 onion
2 medium potatoes
3-4 cm lemon zest
2-3 cm ginger
50g bacon, diced
1 tbsp butter

Peel the potatoes. Cut the onion into thin slices and the potatoes into cubes.
Put them in a pot with the peas, whole lemon zest and ginger into small pieces. Add 250ml of water.
Cook 30 minutes, remove the lemon zest and blend until smooth. You can set aside some potato dice for garnish.
Melt the butter and brown the bacon. Remove from the pan and add the peas soup and the butter. Cook 1 minute.
Serve hot with the browned bacon and a few potato cubes.
