Recipe: Pasta Checca sul Rogo
Pasta with aromatic herbs

Checca sul rogo is a traditional italian pasta dish, with aromatic herbs and chili.
Use your own fresh herbs combination, but should not miss basil, sage, rosemary, garlic and/or chives and chilli. You can also add parsley, a few leaves of celery and a pinch of dried oregano.

Ingredients
Serves two:
180g spaghetti
1 fresh rosemary sprig
4 sage leaves
4 basil tops
4 chives leaves
1 clove garlic
1 chili pepper
2 ripe tomatoes
5-6 tbsp olive oil
Directions
Mince finely the herbs and hot pepper with the mezzaluna. Peel the tomatoes and cut into small cubes.
Boil salted water. Add the spaghetti and cook until al dente.
Meanwhite heat the olive oil in a pan with the clove garlic. After a couple of minutes discard the garlic and put the diced tomatoes in the pan.
Put the drained spaghetti in a serving plate, add the tomatoes and herbs.
Cover and serve immediately.
