I wanted to prepare some savory muffins, and I really enjoyed these ones, tasty and soft.
I used my homemade herbs mixture, the Mediterranean aromatic mixture with oregano, rosemary, sage, chives, marjoram and many other dried herbs, with a touch of chili.
Onion muffins with aromatic herbs
Ingredients
Makes 12 muffins:
1 onion, cooked
3 spring onions
1 egg
250g all-purpouse flour
150ml milk
3 tbsp robiola (or cream cheese)
2 tsp Mediterranean herbs mixture (italian seasoning)
1 tsp baking powder
1/2 tsp baking soda
salt
Directions
Puree the cooked onion and spring onions.
Beat the egg with the milk and robiola, then add all ingredients.
Place in an oiled muffin pan and bake in preheated 180° C (356 F) oven 20-25 minutes.
They are perfect served with robiola and ham.
