Recipe: Herbal vinegar

Sauces, dressings and dips with herbs

I made two pots of herbal vinegar, a garlic one with a strong red vinegar (on the left) and a mint one with a more delicate apple vinegar (on the right).

Herbal vinegar

Garlic vinegar

red wine vinegar
1 clove garlic and fresh garlic leaves
chives buds
1 sprig rosemary
1 sprig dill
1 sprig oreganon
2 sprigs marjoram
3 sprigs common thyme
5 dandelion leaves

Mint vinegar

cider vinegar
2 sprigs horsemint
2 sprigs calamint
1 sprig apple mint
1 sprig balm
orange peel
fresh ginger

After six weeks you should filter them and use them on salads (garlic vinegar) or mixed with honey on fruit salads (mint vinegar).
