Recipe: Hushpuppies (Cajun fritters with thyme)
Fritters with aromatic herbs

A couple of days ago I made some Jambalaya: a Cajun recipe, that my family loves.
I made also some hushpuppies: cajun fritters, golden and quick, with garlic and thyme.
I used regular thyme for the dough, and sprigs of wild thyme to garnish them.

Hushpuppies (Cajun fritters with thyme)
Ingredients
125g cornflour
60g all-purpouse flour
1 tsp baking powder
1 tsp salt
1 egg
100ml milk
1 tbsp olive oil
1 tsp thyme
1 clove garlic
1 tbsp dried onion
Directions
In a bowl, mix the flours with baking powder, then add the salt, thyme, dried onion and chopped garlic.
Beat the eggs with milk and oil, and add to the dried ingredients.
Fry pouring the mixture (about half a tablespoon at a time) in a pan with hot oil until they are golden brown. Serve immediately.
