Growing aromatic herbs

It's autumn, but there's still work to do in the garden: sowings, harvests, protecting the plants.
The harvest
Nettle leaves are tender in October and November, and could be harvested for omelettes, fritters, risotto.

Harvest root from many aromatic plants: lovage, licorice (from three years plants), horseradish (from two years plants), soapwort, valerian (from two years plants).
Seasonal herbs and spices: Burnet, chervil, chives garlic, cilantro, cress, dill, horseradish, lemon grass, licorice, mint, mustard, nettle, parsley, savory, sorrel.

Chilies
During October you can save chili seeds, and continue to harvest and store chili peppers.

Protecting the plants
Annual plants are dying, thyme and marjoram should be pruned, and plants can be protected from winter.
Start also to compost.
Seeds to sow in October
A tip: sow mustard seeds in autumn to harvest the fresh leaves and eat them raw or cooked.

Direct: beetroot, broad beans, broccoli rabe, chickpeas, chicory, corn salad, lentils, lettuce, mizuna, radish, rocket, spinach, white onion, winter radish.
Protected: strawberry.
Aromatic herbs and herbal teas.
Direct: agrimony, angelica, caraway, chervil, coriander, cress, dill, mugworth, mustard, parsley, pennyroyal, sorrel, tarragon.
Protected: confrey.
