Recipe: Lemon and coriander chicken

Finally it's spring and I have enough coriander to use it everywhere: fresh coriander is perfect on chicken, fish and eggs, and it's a classic combo with ingredients like lemon, orange and ginger.
Lemon and Coriander Chicken
Ingredients
300g chicken brest
1 onion
1 tbsp butter
1 tsp curry powder
1 lemon
3 tbsp single cream
1 tbsp mustard
2 clove garlic
2 sprigs of coriander
Directions
Mince the onion and fry with the butter in a large pan. Add the diced chicken brest and the curry powder.
Cut the lemon in half, set aside two slices and juice the rest.
Mix together the single cream, mustard, lemon juice and minced garlic. Pour on the chicken and cook ten minutes.
Garnish with fresh coriander and lemon slices.
