As many of my readers already knows, this year I decided to celebrate Thanksgiving, even if it's not an italian tradition.
It was a success, and I think it will become our family tradition too.
I cooked for two days and after that I was too lazy to publish the recipes. Anyway, I followed a classic pattern: turkey with spiced apple sauce, green beans casserole with mushroom cream, a sweet potatoes side dish, and the apple pie with cranberries (which were very difficult to find in Italy!)
This is the easier recipe, the mashed potato salad.
Mashed potato salad with parsley
Ingredients
500g red potatoes
1 bunch of parsley
10 chives leaves
3 tbsp butter
black pepper
Directions
Peel the potatoes, cut into quarters and cook them in boiling salted water until tender.
Drain well, put in a bown and smash them coarsely with a fork.
Season with black pepper, minced parsley and chives.
Add melted butter just before serving.
