Recipe: Tuna fettuccine with thyme
Pasta with aromatic herbs

Many years ago, during a trip to Greece -where thyme is used on seafood and grilled fish- I found out that thyme is perfect on fish.
Use regular or wild thyme, fresh or dried, but do not prepare this pasta recipe without it!
Tuna fettuccine with thyme
Ingredients
Serves two:
200g fettuccine pasta
160g tuna oil
200ml single cream
1 onion
1 tsp of thyme leaves
Directions
Chop the onion finely. Fry in a pan with olive oil until transparent.
Bring a pot of salted water to a boil, add fettuccine and cook until al dente.
Meanwhile add the tuna in the pan and crush it with a fork. Cook for a minute, then add the single cream and the thyme. Let thicken the cream for a couple of minutes.
Drain well the pasta and season with the tuna sauce.
