Recipe: Homemade potato gnocchi
Harvest and prepare
August 31, 2009
During my holidays, it was potato harvest time.
I know, this is a real harvest, not my annual handful of tiny potatoes!
My mother-in-law used some potatoes for her homemade gnocchi, and she showed me hot to prepare them. It's easier than I expected!
Homemade potato gnocchi
Ingredients
1 Kg potatoes
300g white flour
Directions
Boil the potatoes in salad water, until tender. Peel and mash them with a potato masher.
Knead the mashed potatoes with the flour.
Cut a piece of dough and shape into a cylinder about 1 cm in diameter.
Cut each cylinder into pieces 2-3 cm long.
Press each piece of dough between the thumb and a fork.
Put the gnocchi on the table, dusting them with flour
Cook them in boiling salted water, until they rise to surface.
