Recipe: Potato salad with dill vinaigrette
Salads with aromatic herbs

With my first
dill
harvest of the season I seasoned a quick potato salad.
You can use mayonnaise instead of yogurt for a stronger taste.
Potato salad with dill vinaigrette
Ingredients
500g potatoes
1 bunch of dill
1 small onion
3-4 tablespoons plain yogurt (or mayonnaise)
1 tbsp white vinegar
1 tbsp olive oil
1 radish (optional)
Directions
Boil the potatoes in salted water, then peel and let cool.
In a bowl combine olive oil, vinegar, chopped dill and sliced spring onion. You can also add a radish, peeled and finely chopped.
Whisk together and let set.
Add yogurt and potatoes cut into chunks and mix gently.

Dill is one of my favorite herbs and I love lots of it in potato salad--this one looks fabulous! Thanks for sharing it with Souper Sundays this week. ;-)
