For this soup I used my homemade mediterranean aromatic mixture, similar to italian seasoning, with rosemary, sage, marjoram, thyme, oregano, mint and several other herbs.
I also added some fresh chives and a touch of allspice.
Leeks, Brie and aromatic herbs soup
Ingredients
Serves 3-4:
1 leek
1 stalk of celery
1 potato
2 tbsp butter
1 tbsp mediterranean aromatic mixture (or italian seasoning)
1 pinch of allspice
100ml single cream
4 tbsp grated Parmesan cheese
100g brie
chives
Directions
Discard the outer leaves and the upper part of the leek.
Finely chop the leek and celery, then season them in a pan with the butter for a few minutes. Add 400ml of water, and the potato, peeled and cut into cubes. Cook for 15 minutes.
Remove from heat, season with salt, and puree.
Put on the heat, add the herb mixture, allspice, cream and Parmesan and cook for a couple of minutes.
Put into bowls and garnish with slices of brie cheese and chives.
